Strawberry Coconut Popsicles


When I was in Jr. High, I had a lot of friends who were into this new (to our circle of friends) crazy thing called "BOBA". People loved to get these little brown balls in their smoothies and teas, and I was NOT about that life. I didn't understand what they were, what they were doing in people's drinks, and why people were so obsessed with them! Who wants brown balls in their delicious smoothie?? I refused to try it. The whole concept of chunks of something in your drink just really irked me. 13 year old me was full of "NO THANK YOU".

Fast forward to me being out of high school erm-10-plus-something-erm years, being married to my lovely and ridiculously handsome Korean husband. John loves boba. In our first few years of dating, he convinced me to try it. As with most things that I tried after being raised on chicken and milk, I was pleasantly surprise with how delicious it was!

For those that don't know what boba is, boba balls are a form of tapioca that is commonly used in bubble milk tea. It's commonly served in Taiwanese and Chinese culture, and it's straight up DELICIOUS.

So what does boba have to do with popsicles? Well it's not the popsicles themselves, but the flavors in them.

John and I have a this favorite boba spot. It's not our favorite because its the BEST boba around (I'm not naming names, that's not what this post is about). It's our favorite because they offer the best smoothie with this flavor combo. Strawberry and Coconut. Other places do similar things, but this place. They get it right. Mostly coconut, with swirls of fresh strawberry. Swirls. SWIRLS. Not blended together in a pink mess. I like to see the seperation of the tropical white and the sweet red.

Problem is, this place is a little bit of a drive for us. Not much, but enough to deter us from making the daily trip. Because let's be honest, we WOULD make that trip daily.

So instead of driving the 30 minutes, we are sittin' pretty at home, eating our favorite flavor combo in popsicle form. And so can you!

 

Strawberry Coconut Popsicles

Prep Time: 10 minutes

Total Time: 8 hours 10 minutes

Servings: 10 popsicles

Ingredients:

1/2 lb strawberries, washed and halved

2/3 cup honey, seperated

1 cup cartoned coconut milk (I used a carton of Silk, and its SCRUMPTIOUS)

3/4 cup full fat canned coconut milk (you can just use all cartoned if you'd like, I found this combo gave the most coconut flavor)

1 1/2 teaspoon vanilla

Tools:

10 popsicle sticks

popsicle mold for 10

1. Place strawberries and 1/3 cup honey in a blender and puree until smooth. In a seperate bowl, whisk together remaining honey, coconut milks and vanilla.

2. Alternating between the two, pour 1 Tablespoon of the separate mixtures into the molds until each is full. To give the popsicles the swirled look, take a skewer/knife/long stick-like object and give it a quick swirl. I did mine by making a little figure eight. Place one popsicle stick into each mold, and place the molds in the freezer. Freeze for 8 hours.
