Pumpkin Chocolate Chip Pizookies
This is not a new thing; I seriously love BJ's Brewhouse. I've done a copy cat recipe of my FAVE pizza served there, the Buffalo Chicken Pizza, and I can't believe I didn't mention to the cookie-pizza (aka The Pizookie) that the chain restaurant made famous.
Warm and slightly underdone cookies fill a personal pizza pan, and it's all topped with a huge scoop of ice cream. It's cookie HEAVEN. As a fan of doughy cookies, this dessert is my JAM. It's all the goodness of cookie ice cream sandwiches, but warm, gooey, messy decadence. BJ's offers a variety of flavors including Chocolate Chunk, White Chocolate Macadamia Nut, Triple Chocolate, Monkey Bread, Peanut Butter, Salted Caramel, Peanut Butter S'mores, and Cookie's and Cream ( my all time favorite flavor!). They usually throw in a seasonal flavor, but I thought I'd take matters into my own hands and create a fall favorite.
I've said it before and I'll say it again, PUMPKIN ALL THE THINGS. I took a slightly doughy-er pumpkin chocolate chip cookie recipe, put it in a personal skillet, and topped it off with a mondo-scoop of vanilla ice cream and salted caramel sauce. Because why not? Everything is better with salted caramel!
The only problem I'll have with this, is trying to justify eating this year 'round... meh. I don't need to justify anything! PUMPKIN ALL THE THINGS!
Pumpkin Chocolate Chip Pizookie

Servings: 2 pizookies
6 Tablespoons melted and cooled butter
1/2 cup white sugar
6 Tablespoons brown sugar
2 egg yolks
1/4 teaspoon vanilla
3/4 cup pumpkin puree (not pumpkin pie mix)
1 1/2 cup plus 2 Tablespoon flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon clove
1/4 teaspoon nutmeg
1 1/3 cup dark chocolate chips
Salted Caramel Sauce
2 Tablespoons butter
1/4 cup brown sugar
1/4 teaspoon salt
3 Tablespoons heavy whipping cream
Vanilla ice cream
1. Preheat oven to 350 degrees. In a mixing bowl, combine melted butter, white sugar, brown sugar, egg yolks, vanilla and pumpkin puree. Mix until fully combined.
2. Add flour, baking soda, salt, cinnamon, cloves, nutmeg and chocolate chips to wet ingredients. Mix on low, stopping to scrape the sides of the bowl if necessary.
3. Grease 2 personal pizza pans, small oven safe skillets, small cast iron skillets with cooking spray and divide dough between the two, making sure to allow space for the dough to expand (see picture below). If you don't have these smaller items, you can put all the dough into a 9 inch round cake pan or a 8x8 brownie pan and share amoung friends.
4. Place the pizookies in the oven and cook for 11-12 minutes. I suggest setting your timer for 10 minues so you can walk away, then come back and watch for the final minute or so. You want the middle to still be very soft, so prick with a toothpick and allow for a small amount of dough to stick to it as it's brought out of the pan.
5. Once you have put the pizookie in the oven, make the Salted Caramel Sauce. Melt the 2 Tablespoons of butter in a small sauce pan over medium high heat. Once completely melted, add the brown sugar and the salt and mix with a spatula until you can no longer feel the grains of the sugar/salt as you stir. It may start to all stick together, and that's fine. Add the heavy whipping cream and mix until fully combined. It may take a little bit, but I swear it will all come together. When completely mixed, allow the sauce to boil for at least one full minute to 2 minutes without stirring it. Watch it so it won't boil over, but do not stir for a while. After the two minutes, turn off the heat and stir to let settle. This sauce will thicken as it cools. If you find the sauce is too thick, add 1 more Tablespoon of whipping cream and turn the heat back on to medium, and stir until combined.
6. As soon as pizookies are done, serve immediately with LIBERAL amounts of vanilla ice cream, Salted Caramel Sauce and roasted pecans.
