Peanut Butter Whip Dip


Are there days that you just want peanut butter for every meal, or is that just me? Man, I sure hope there are more of you peanut butter lovers out there who dream and obsess over creamy, chunky, and natural nutty butters. If I'm looking at a menu and there is "peanut butter" listed somewhere on that page, my eye goes straight to it. No long wait-time to order. Decision made. Peanut Butter dish of my dreams, please. And if it's dessert and it's paired with chocolate? Well, now you're just being silly. I'll take five, thanks.

So being the PB Freak that I am, my heart skipped a beat when a co-worker of mine mentioned a Peanut Butter Dip she was making for a church meeting. Excuse me, what? I thought. Then she mentioned that she'd bring some in the next day for me to try. EXCUSE ME, WHAT? You get the idea. She found hers on Pinterest and it consisted of greek yogurt, peanut butter and a bit of honey. Delish. I loved it. But I wanted to amp it up!

Thus, I give you Peanut Butter Whip Dip. Perfect for a snack or dessert, it has the same three ingredients plus a few, and an extra step which I think makes all the difference. You gotta whip it, baby! Whipping the greek yogurt gives it a lighter texture by incorporating a bit of air into it. Who doesn't want a fluffy dip?

Not only is it scrumptious, it's good for you. Once again, beauty and brains in this recipe. You know how I love that combination. I've sung my praises for greek yogurt as a substitute over and over, so I'll spare the details. Just know that while you eat this sweet dip, you are doing your body good!

 

Peanut Butter Whip Dip

Prep Time: 5 minutes

Servings: Makes about 1 cup of dip

Ingredients:

- 2/3 cup greek yogurt

- 1/4 cup smooth peanut butter

- 1 Tbsp honey

- 1/4 tsp cinnamon

- 1/2 tsp vanilla

1. Combine all ingredients. Use hand/stand mixer and whip on high for about 1 minute.

2. Serve immediately or chill for later.
